While hot tea was consumed for many years prior, it wasn’t until the early 1800s that ice became widely available. Bartenders began mixing tea in their cocktails (like the classic Philadelphia Fish House Punch), and in 1876, the first nonalcoholic iced tea recipe appeared in Estelle Woods Wilcox's “Buckeye Cookbook.” However, a merchant named Richard Blechynden is widely credited for popularizing the beverage at the St. Louis World’s Fair. Blechynden realized that his hot tea wasn’t selling in the summer heat, so he simply threw in some ice. The new drink quickly gained popularity, particularly in the South where heaps of sugar were added to make sweet tea. Today, 85 percent of tea consumed in the U.S. is iced. :
