Taiwan - Bubble tea (or boba) consists of cold, milky tea served with small, chewy tapioca balls that make the “bubbles” inside the drink. Since it was invented in Taiwan in the 1980s, bubble tea has quickly grown in popularity, but there are a few competing theories on its origin. The most widely accepted theory credits a woman named Lin Hsiu Hui, an employee of Chun Shui Tang teahouse in Taichung, Taiwan. The shop’s owner, Liu Han-Chieh, started selling cold tea after he visited Japan in the early 1980s and enjoyed cold coffee there. In 1988, Lin Hsiu Hui brought tapioca balls, a typical Taiwanese desert, to a marketing meeting and dropped them into her iced tea. The novel idea proved remarkably popular with her colleagues, and, soon, it became the store’s most popular drink. Since its creation, bubble tea has become a top export from Taiwan. Drink menus around the world now include dozens of flavors, from melon to taro to the classic milk tea.:
