Pierre "Pig's Eye" Parrant was the first inhabitant to live in the future city of Saint Paul. He opened the "Pig's Eye" tavern which became wildly popular in the community. When a local resident named Joseph Brown sent a letter to a friend in 1839 he gave the return address simply as "Pig's Eye." Soon after, Brown received correspondence at the address he had given. As a result, the growing community around Pierre's bar adopted the name "Pig's Eye." In 1841, the village was renamed to its current name of Saint Paul.
