Dahlia - Dahlias were an important source of food and medicine for the Aztecs. The tubers were eaten much like potatoes, and the hollow stem was used for water irrigation. In 1789, Spanish conquistadors brought the plants from their native Mexico to the Royal Botanical Gardens in Madrid, Spain, where Dr. Anders Dahl began hybridizing the flowers. Dahl's efforts were much admired and the Mexican plants, now named in his honor, were sent all over Europe. By the early 19th century, botanists had developed double forms of the flower, improved its globe-like shape, and produced an array of colors ensuring the dahlia gained widespread popularity. In 1963 the dahlia was named the national flower of Mexico.:
