Italy - The origins of the macaroon cookie can be traced to Italy. The flourless, unleavened cookies were originally made with almond paste and known as “amaretti” in Italy. Eventually, chefs began to swap in coconut for the almond paste or make the cookie with finely ground almond powder. The coconut version of the cookies became very popular in the European Jewish community and still are to this day. The ground almond cookies were developed in France (where they are spelled “macarons” instead of “macaroons”). These are the pastel-colored, meringue sandwich cookies we see in boulangeries today.:
