It is considered the national dish of Scotland and is eaten with much ceremony on Burns Night (January 25), the birthday of celebrated poet Robert Burns. Sheep liver, lungs, and heart are mixed with oatmeal, onion, and seasoning and stuffed inside a sheep's stomach to make the haggis. It is then boiled and served with turnips and mashed potatoes.
