The croissant as we know it today was inspired by the Austrian kipfel, which is similarly crescent-shaped, butter-filled, and occasionally enjoyed with sugar or almonds. The kipfel is said to date back to the Austrian victory over the Ottomans in 1683. As legend has it, in the wee hours of the morning, a baker was up preparing his bread when he heard the Ottomans tunneling below, and he warned all of Vienna. In honor of the victory against the invaders, the kipfel was born, with its crescent moon shape mimicking that of the Ottoman flag. According to an expert on croissant history, Jim Chevallier, “The croissant began as the Austrian kipfel but became French the moment people began to make it with puffed pastry, which is a French innovation.” So, you can say “merci” and “danke” to both France and Austria for gifting the world this delicious treat.:
